In order to clean a goose with the breast out method, you will need the following: a sharp knife and water. You will need to begin by plucking the goose. Remove enough feathers to expose the breast. Make a small slit in the breast. Cut deep enough to slit the skin. Then, you should be able to peel the skin away, with the feathers intact. Make sure that all of the breast meat is exposed. Cut along the side of the breastbone, when the skin is removed. Follow along the bone, cutting your way down. Cut along the Y-bone. Cut away the breast on each side and place it in the water.
